Baked salmon, wrapped in parma ham
With beetroot, red peppers, courgettes, brocolli, tomatoes,
And added cashew nuts, sesame seeds, rosemary, garlic and chilli
Drizzled with olive oil, balsamic vinegar and lime juice
With wild rice or sweet potato if you are training hard and need a boost of energy

I went to the Eden project for a couple of days, I love what they have done in the Biomes and it really highlights the importance of looking after the forests and nature.
Bananas are a great source of energy and fuel, make sure you buy Fairtrade for added goodness and supporting local communities…
I actually like them on a rice cake with tuna on top, others prefer with soda bread and peanut butter, good energy snacks!
