The Carrot, is it your favourite?

The Carrot! I hear you ask – why would we post a Blog about a Carrot…. well we thought, why not…. as it is a great vegatable – offering so many good things we felt it deserved a little Blog no less.

 

Where:  They orginally come from Afchanistan and used to be purple, the Greeks used them as a love medicine and orange colour originated in Holland.

 

Why: They are a superfood so definately worth popping on your shopping basket, maturally low in calories yet packed with goodness, fibre for a healthy digestive system and low blood glucose levels  .

 

What:  Packed with beta-carotene, which converts in your body to Vitamin A – of all the vegetables they give you the highest levels of the vitamin which is essential for  a strong immune system. It keeps the cells and skin that line the airways, digestive tract and urinary tract healthy so they act as a barrier against infection.

 

Really?:  Can they help you see in the dark?  Vitamin A works by being transformed into a purple pigment called rhodopsin in the retina, and this pigment is essential for vision in dim light. So proportionally yes 🙂
