Negat’s Eritrean Hamli Recipe

Negat’s Eritrean Hamli Recipe: Hamli is the perfect side to all kinds of dishes, and a great way to bump up your vitamin intake!

Serves 4 as a side
1/2 onion, diced
2 tbsp sesame oil or olive oil
1-2 large cloves garlic, crushed
2cm ginger, grated, or 1 tsp dried ginger
1 red pepper, diced
1/2 tsp salt, or to taste
1 tsp ground coriander
1 tsp ground cumin
500g fresh spinach

1. In a large, deep saucepan, cook the onion in the oil until it starts to brown.

2. Add the garlic, ginger and pepper and cook for around 5 minutes.

3. Add the spices and salt and stir well before adding the spinach. Cook on a low heat until the spinach has wilted, adding a drop of water, if needed. Taste to check the seasoning and adjust as needed.
